Easy Recipes

I was wanting to get Leslie's recipe for the tasty chicken & rice casserole that she brought to us after we had Pierson and it occurred to me that we might use this blog to do a little recipe sharing. I'm always looking for something new, quick and easy to cook, and I'm sure I'm not the only one. So if you have a minute, share one of your favorite quick and easy recipes with the class. You never know, someone else might end up bringing it to the next potluck! Happy Cooking. . .

Summer's Herb Seasoned Chicken

8 chicken breasts
8 slices swiss cheese
1 can cream of chicken soup
1/4 c. dry white wine
1/2 small onion (finely chopped-- Chad likes it without the onion)
1 cup herb seasoned stuffing mix crushed (Pepperidge Farms)
1/2 stick butter melted

Arrange chicken in greased 9x13 baking dish. Top with cheese slices. Combine soup, onion and wine in a mixing bowl, stirring well. Spoon sauces evenly over chicken and sprinkle with stuffing mix. Drizzle melted butter over chicken. Back for 45 min--1 hour at 350.

Good with rice or baked potato, asparagus, and rolls!

Oops. I meant to type "BAKE" not "BACK," obviously. But if there is anyone out there who needs clarification, you will need to BAKE the chicken for 45 minutes to 1 hour.

Good idea Summer! I hope to see a LOT of comments on this one. I need new recipes! Okay, Chicken and Rice....super easy:

1 can cream of mushroom soup
1 can cream of chicken soup
1 can cream of celery soup
1 can french onion in beef stock
1 cup Uncle Bens or Comet long-grain rice
4 chicken breast cut up - uncooked

Mix all ingredients together and put in 9 x 13 dish. Cover with foil and cook at 350 for 1 hour 30 minutes.

Enjoy!

Lisa's Taco Soup

1lb. ground beef/turkey
1-2 onions
1 package taco seasoning
1 package dry ranch seasoning
2 cans pinto beans
1 can rotel
1 can yellow hominy
1 small can sliced black olives

Brown meat and mix all ingredients in pot on stove. Top with cheese or crushed tortilla chips. Super quick and especially yummy on a cold day. For extra spice, use the pinto beans with jalapenos and the extra spicy rotel. Or for less spice (for those nursing mommas out there, or just the sissies) use the mild rotel and the plain pinto beans. Enjoy!

Meatloaf

1 Tbs butter
1/2 c onion finely chopped
1/2 c bell pepper finely chopped

1 1/2 lbs lean gr. beef
1 1/4 tsp salt
1/2 tsp black pepper
1/4 tsp white sugar
1 Tbs worcestershire sauce
1/3 c ketchup
1 egg slightly beaten
1/2 c plain bread crumbs

1. Melt butter in pan and cook onions and bell peppers on medium heat until tender and onions start to brown. Set aside to cool.
2. In large bowl, mix ground beef with remaining ingredients and the cooled onions and peppers.
3. Mix well then place in pan and shape into loaf. Top with extra ketchup( about 1/3 cup). Cook on 375 for 1 hour.

OK, if you brought anything to the potluck today, I want the recipe for it! That was some good eating today!

Here's the recipe for the meatballs (when it's this easy, is it really even considered a recipe?):

1 pkg frozen meatballs
1 bottle BBQ sauce
2 cans whole berry cranberry sauce

Mix the sauces, and pour over the meatballs. Cook for about 3 hours on high in a crock pot. Great for holiday parties!

Trish's Chicken Pot Pie

I hesitate to share this because i usually take this when people have babies but oh well!!

1 box Pillsbury "all ready pie crust"
4 chicken breasts seasoned w/Tony Chachere's creole seasoning--bake @ 350 for 45 min. Cube

In large bowl, mix:
1 can mixed veggies-drained or frozen veggies
1 can cream of celery soup
1 can cream of potato soup
2/3 cup milk
season w/ Nature's seasoning by McCormick
chicken

Cover bottom or retangular casserole dish (or 2 squares) w/pie crust, pour mixture on crust and top with the 2nd pie shell. Cut holes in top to vent. Bake @ 350 for 1 hour. Makes enough to share and for my family.
